Lycopene is a red carotenoid most concentrated in tomatoes and tomato-based products such as sauce and paste. It is one of the most potent antioxidants among the carotenoids. Observational studies link higher dietary lycopene intake to reduced risk of prostate cancer and cardiovascular disease, though randomized trials have not firmly established causality. Cooking tomatoes and consuming them with fat significantly increases lycopene bioavailability.
